Levitate Earns Its First Michelin Star. Prague Has Another Reason to Celebrate Fine Dining

Levitate’s creative cuisine in Prague’s Vinohrady district has reached an extraordinary milestone: it has been awarded its first Michelin star by the world-renowned MICHELIN Guide. The accolade confirms not only the kitchen’s top-tier standard, but also the originality and courage with which Levitate has long been working—with flavours, ingredients, and the emotions gastronomy is meant to evoke.

“Receiving a Michelin star from the MICHELIN Guide is a tremendous recognition for us, as well as a commitment. It is proof that at Levitate we continuously push the boundaries of what’s possible—and that our guests appreciate our journey,” says chef and co-owner Christian Chu.

Levitate is built on a concept that is exceptional in Prague: it draws from the foundations of modern Nordic cuisine—respect for seasonality, local ingredients, and making the most of what nature offers—while naturally incorporating the chef’s Asian roots. This very combination of a “responsible and restrained” Nordic approach with the Asian diversity of flavours, aromas, and colours is one of Levitate’s signatures.

As the restaurant describes its own philosophy, the ingredients on the plate should be easily recognisable, yet still carry an element of surprise. The result is modern experiential gastronomy that is precise, contemporary, and deeply emotional.

“Levitate’s philosophy is about discovery and working not only with ingredients, but also with emotions. The Michelin star is confirmation that we are succeeding in creating experiences that truly resonate,” adds co-owner and creative manager Miroslav Šole.

The team behind the rapid rise

Levitate’s story is built on a combination of talent and experience. According to his own words, Christian Chu has been “among pots and pans” since the age of fourteen, and has connected his passion for cooking with travel and discovery. Miroslav Šole brings strong international know-how to the project: he spent more than 20 years at Compass Group, where he helped oversee hundreds of restaurants across multiple countries and worked with prominent names in world gastronomy. Today at Levitate he acts as a manager, mentor, and creative sparring partner—with the goal of continuously pushing both the team and the menu forward.

A double confirmation of quality: Michelin and Gault&Millau

The Michelin star is not the only success this year. Levitate has also received three toques from the French gastronomic guide Gault&Millau, further confirming its position among the most distinctive venues on the Czech culinary scene.
