That is exactly what happened to Master Chef Tayfun, who transformed from a product photographer and hotel manager into a producer of authentic Turkish baklava.
His story is proof that even the most unexpected twists in life can become the beginning of something truly extraordinary.
When Life Changes in an Instant
After completing his role as a hotel complex manager in Turkey, Tayfun decided to move to Prague. He had accepted a position at a prestigious hotel while planning to pursue product photography—his long-time passion—in his spare time.
Then, shortly after his arrival, the COVID-19 pandemic brought everything to a standstill.
Hotels closed, businesses shut down, and photography commissions disappeared almost overnight. Instead of the fresh start he had envisioned, he found himself facing uncertainty and seriously considered returning to his homeland.
It was during this challenging period that the support of his Czech family became invaluable, encouraging him to stay and search for a new direction.
A Family Joke That Became a New Business
At family gatherings, he often heard the same playful question:
“When are you going to bake us some real Turkish baklava?”
What initially sounded like a harmless joke gradually turned into a serious idea.
He remembered his childhood, when he spent his summer holidays helping in a traditional baklava bakery. Those early experiences introduced him to the craftsmanship behind one of Turkey’s most iconic desserts.
Determined to master the craft properly, he decided to start learning again—this time in a systematic and professional way.
Two Years of Study and Hundreds of Hours of Practice
Making exceptional baklava is far more complex than it may seem.
Over the course of two years, Tayfun studied traditional production techniques, the characteristics of different types of flour, the correct balance between sugar and acidity, and the precise temperatures and humidity required during baking.
Working from his own kitchen, he prepared batch after batch, consulting experienced baklava masters in Turkey through online sessions.
He soon discovered that Czech flour simply could not achieve the delicate texture required for authentic Turkish baklava. Its protein content was too low to produce the paper-thin layers that define the traditional recipe. After months of experimentation, he decided to import both the flour and premium-quality pistachios directly from Turkey.
Where Tradition Meets Modern Innovation
After successfully completing his practical examination in Turkey, Tayfun obtained his professional certification and opened his own bakery.
While remaining faithful to traditional recipes, he refined several aspects of the production process to meet today’s expectations.
He reduced the amount of sugar to the absolute minimum, increased the proportion of premium ingredients, and fine-tuned both the dough preparation and baking techniques. Every variety of baklava requires its own carefully controlled temperature and humidity to achieve the perfect balance of crispness, texture and flavour.
The result is authentic Turkish baklava that honours centuries-old craftsmanship while reflecting contemporary standards of quality and taste.
A Second Bakery Is Already on the Way
The success of the first bakery has naturally led to the next step.
A second bakery in Prague is currently undergoing final approval and will soon allow even more customers to experience authentic Turkish baklava prepared according to traditional methods.
Tayfun’s story proves that having the courage to change direction can lead to remarkable opportunities. Sometimes, all it takes is one unexpected turning point to rediscover a talent that has been with you since childhood—and to transform it into an entirely new beginning.
